After 14 years at Recaredo, Joan Rubió went back to his roots. Not to follow the rules, but to rewrite them.

His approach is simple: biodynamic farming, minimal intervention, and letting the wine do its thing. It's about less control, more character and more personality into his craft.

This isn’t about textbook Penedès. It’s about what happens when you let things take their own shape. Rubió just lets it run.

Most people know Penedès for cava.
Clean. Structured. Familiar.

Rubió flips it.
Looser, more expressive, and a little unpredictable in the best way. Wines that feel alive, not engineered.

One shaped by smaller growers, native grapes, and a slower approach to winemaking. It feels less polished, but more personal.

This is where Joan Rubió comes in. Not trying to perfect wine, just letting it be what it is. They call him the Xarel·lo whisperer.

After 14 years at Recaredo helping shape biodynamic farming practices, Joan stepped away to start again. Back on his own land, working with the same vineyards his family has farmed for years, just 15 to 20 kilometres from the Mediterranean.

The approach is simple. Farming already changes nature, so the goal is not to control it further, but to work with it. Everything starts in the vineyard.

In the cellar, the same approach carries through. Fermentations happen naturally, and the wines are handled as little as possible. Joan’s philosophy is simple: Less intervention, more wine.

  • Biodynamic farming
  • Spontaneous fermentation
  • Free-run juice
  • No additives, no fining, no filtration
  • Minimal sulphur, only when needed

Nothing added to shape the wine. Just guiding it along and letting it show up as it is. Wines that reflect where they come from, not just how they are made.

🍇 What to Expect in the Glass

These are not wines built to impress on the first sip. They open up as you drink. A bit more relaxed, a bit more expressive. Think:

  • Fresh citrus and orchard fruit
  • Light texture, sometimes a bit of grip
  • A clean, mineral finish
  • Balanced, easy, but not simple

Some feel clean. Some feel a little more alive. That is part of the experience.

They work best with food, but are just as easy on their own.

Think grilled ikan bakar, kam heong lala, roast chicken or char siew. Salty, savoury, a bit of spice. That is where these wines really come together.
