In 2018, our small winery began exploring the production of skin-contacted orange wine. Our experience shows that early harvesting preserves better freshness, while a week of skin contact enhances structure without becoming overly heavy. Aging in old barrels for one year, followed by another year in-bottle, polishes the overall structure, blending it more harmoniously.
Ultimately, we aim to present a round mouthfeel, rich flavour, and acidity that complements this structure. China may be the country best suited for orange wine. Not only do our dishes pair well with orange wine, but the terroirs of various regions are also conducive to its production. The intense sunshine of Ningxia, the cool autumn rains of Huailai, and the altitudes of the Southwest all contribute to the creation of orange wine.
This orange wine is made from Chardonnay grapes sourced from the Doves Mountain in Qingtongxia and Jingshan in Yinchuan, Ningxia. It features flavours of bamboo salt, yellow skin, dried lemon slices, honeysuckle, and oolong tea. It is best enjoyed lightly chilled.
