Domaine Didon Bouzeron 2023

The Didon's 2 ha 'lieu-dit or 'ancient vineyard' is called Vignes Blanches and is an east facing slope of yellow limestone. They protect the soil from compacting by farming with horses or by hand only.  

In the cellar, whilst being very hands-off, they are not afraid to try innovative techniques and ferment in barrel, amphora and fibreglass.  

Zero sulphur is added to Domaine wines and very little to Negoce. 100% Aligote grapes sourced carefully, pressed as whole bunch in an old wooden vertical press.

Aged for 8 months in used barrels and bottled with very little SO2.
