DB Schmitt Monsheimer Sylvaner Zold 2021

Hand harvested grapes are destemmed and go through a 4 week maceration in fiberglass tanks.

Indigenous yeasts used with ambient temperatures for fermentation in oak barrels. 

Natural malolactic fermentation occurs before being bottled unfined, unfiltered with a very small addition of SO2.  

Delicate fruity notes on the nose, on the palate much more intensity with a rounded texture balanced by acidity and minerality (which Sylvaner expressed particularly well on these soils).
