Les Fondraux is a balanced semi-sweet white wine made from grapes grown on siliceous and clay-rich soils. Harvested in the cool hours of early morning, the grapes are gently pressed using a pneumatic press.
The juice is then slowly fermented at low temperatures in double barrels and aged on fine lees, creating a wine with smooth texture and depth. Fermentation is naturally stopped to preserve a touch of residual sugar, resulting in a wine that is both fresh and delicately sweet.
With floral notes and a lively balance of freshness, minerality, and body, Les Fondraux is versatile and food-friendly. Enjoy it young alongside freshwater fish, cold cuts, goat cheese, or sweet-savoury dishes.
As it matures, it becomes an ideal match for spiced dishes (think cumin or coriander) and white meats.
