A symphony of 40% Merlot, 30% Corvina, and 30% Croatina, this blend hails from the hillside charm of Valpantena in the northeast corner of Valpolicella.
The soil, a mix of calcareous flakes and pebbly goodness, sets the stage. Handpicked Merlot and Corvina grapes undergo a month-long drying dance in the Fruttaio, a dry and breezy spot carefully managing humidity.
The result? The grapes lose 30% water and gain a sweet sugar boost. Fermentation in separate steel tanks, a cozy 25-28°C for 20 days.
A three-month maturation tango in large cherry barrels follows. Blending in, malolactic fermentation jazzes things up, making this wine a harmonious delight.
